I’m Sarah.

After graduating college, I worked as a TV news reporter at an NBC affiliate outside of Chicago. I then retired from that life to be a stay at home mom to my three little ones. I love a good sandwich and I love fresh mozzarella, so the other night I made these caprese baguettes, which were delicious.

The ingredients: 
Fresh mozzarella ball (cut in to slices)
Fresh basil
Tomatoes (sliced)
Baguette
Balsamic vinegar dressing

Balsamic Vinegar Dressing Recipe: (taken from the food network)
1/4 cup balsamic vinegar
2 teaspoons dark brown sugar
1 tablespoon chopped garlic
1/2 teaspoon salt
1/2 teaspoon pepper
3/4 cup olive oil

Put all of the ingredients in a tupperware bowl or other container with a tight lid then shake like crazy to combine.

We toasted our baguette a little in the oven first, then added on the mozzarella, tomatoes and basil. Then drizzled the dressing on top. It's such a good, light sandwich and one of my new favorites.
