After graduating college, I worked as a TV news reporter at an NBC affiliate outside of Chicago. I then retired from that life to be a stay at home mom to my three little ones. I made these little mint chocolate bites over Christmas, but thought they would be a great St. Patrick's day treat... by just adding some green food coloring.
recipe.
1 1/2 cups crushed oreos
3 tbls melted butter
2 cups powdered sugar
2 tbls softened butter
2 tbls milk
1 tsp peppermint extract
6 oz bittersweet chocolate (I used chips)
2 tsp shortening
a couple drops of green food coloring
Preheat oven to 350 degrees. Line an 8x8 baking pan with foil, extending foil over the pan edge.
In a bowl, mix crushed cookies and melted butter. Then press mixture firmly on the bottom of the foil lined pan. Bake in the preheated oven for 8 minutes. Let cool.
Combine powdered sugar and softened butter in a food processor. Cover and process until butter is evenly distributed. With the processor running, add milk, peppermint and food coloring. Once it makes a sort of paste, spread it evenly over the oreo crust. Put in freezer for 45 minutes.
In a microwave safe bowl, combine chocolate chips and shortening. Microwave for one minute at a time until the chocolate is melted (about 2 minutes). Let chocolate cool for 15 minutes. Pour chocolate over mint layer and spread evenly. Using the edges of the foil, lift the uncut bars out of the pan. 
I cut it in to 1 1/2 inch squares, but you could use a small cookie cutter. Make sure to cut them before the chocolate on top hardens, so you have to cut them immediately.
