fruit salsa 3 ways
The other night I made these delicious fruit salsas to eat with some BBQ pulled chicken sliders.
3 cups finely chopped fruits
2 tablespoons fresh herb
2 tablespoons finely chopped onion and or finely chopped pepper
1 teaspoon lime or lemon zest
2 tablespoons lime or lemon juice
1 tablespoon honey or sugar
1/2 teaspoon sea salt
I used apple and peach with onions and basil. Blueberry nectarine, red pepper red onion, basil. Cantaloupe, plum, basil, red onion.
For the chicken sliders, I just put some chicken breasts in the crockpot with some BBQ sauce and let it cook, then shredded it. I used small dinner rolls for the buns. Because they were sliders and smaller, we used the different salsas on different sandwiches. My favorite was the apple and peach... seriously, I think every pulled pork or chicken sandwich should have apples on it!
