I love making this lemon ice during the summer. It's a great lower calorie alternative to ice cream. I love the lemon, but also add crushed strawberries to it to make a strawberry lemon ice. And I love the Oh Joy goblets I bought at Target.
3 cups of water
1 cup sugar
zest of 1 lemon
1/2 cup fresh lemon juice I usually can get a half a cup with 2 or 3 lemons
Boil the water with sugar. In the meantime mix the zest with the lemon juice. After the sugar water reaches boiling, remove from heat and combine the lemon juice with the sugar water in a shallow metal pan. I use a round cake pan. Put it in the freezer and stir every half hour for a few hours. This part is crucial because if you forget to stir it, it will just be one huge lemon flavored ice cube.
