After graduating college, I worked as a TV news reporter at an NBC affiliate outside of Chicago. I then retired from that life to be a stay at home mom to my three little ones. IMG_3259IMG_3257IMG_3248 IMG_3253So as I've mentioned, my husband and I started the Whole 30 program last week. It's always exciting for me to try new recipes. There were definitely some winners and losers so far. I will make sure to share some of my favorites. This first one is stuffed acorn squash. It was so good. With Whole 30, I have to make just about all of my sauces, and that takes time. I'll spend like 45 minutes making a meal and then think, oh man I don't have any barbecue sauce for this!! So I look up recipes and they all take like 20 more minutes, so we just end up going sauce-less. By now I have my own little stockpile of sauces to use. But what I like about this recipe is that you don't even need a sauce because the squash is so sweet and has such a smooth texture, it's a perfect balance.
