Chocolate, Marshmallow + Cookie Cupcakes

It's no secret I love chocolate cupcakes. I have a recipe I love to use, but I am always looking for a good frosting recipe and different ways to decorate these chocolate cupcakes. The possibilities are so endless when it comes to fun and yummy ways to decorate a chocolate cupcake.

I normally make a simple buttercream, but this time I added some marshmallow fluff to the recipe. And chocolate chip cookies go well with just about anything right?! :) So I made one of my favorite cookie recipes, cut them with a circle cookie cutter and placed them on top. It makes for a delicious treat. 

C H O C O L A T E  ,   M A R S H M A L L O W    +   C O O K I E S   C U P C A K E S


CHOCOLATE CUPCAKES Recipe from Life Love and Sugar
Ingredients:
2 cups flour
2 cups sugar
3/4 cup Hershey’s Special Dark Cocoa powder
2 tsp baking soda
1 tsp salt
2 large eggs
1 cup buttermilk
1 cup vegetable oil
1 1/2 tsp vanilla
1 cup boiling water

Put your cupcake liners in your cupcake tray. Preheat your oven to 300 degrees. Add dry ingredients in a large bowl and whisk together. Add eggs, buttermilk and vegetable oil to the dry ingredients and mix well. Add vanilla to boiling water and add to mixture. Mix well. Pour cupcake batter in to the cupcake tray filling each cupcake 3/4s of the way full. Bake for 15-20 minutes. Insert a toothpick into the cupcake and if it comes out clean, the cupcakes are done. Set on a cooling rack. 

MARSHMALLOW BUTTERCREAM FROSTING
Ingredients:
1 cup butter (softened)
1-7oz container of marshmallow fluff
1 cup powdered sugar
1/2 tsp vanilla extract

In a large bowl, cream the butter with a mixer on high speed- about 2 minutes. Beat in the marshmallow fluff and mix until creamy and well incorporated. Turn the mixer to low and slowly beat in the sugar and vanilla until well mixed. Turn the mixer to high and mix until fluffy.

CHOCOLATE CHIP COOKIES
This is my go to cookie recipe-but any chocolate chip cookie recipe with work great.

After the cupcakes have cooled, frost them and then top with a chocolate chip cookie. I cut my cookies with a circle cookie cutter first before placing on top.
